Parmesan Garlic Steak Bites

Equipment

Ingredients

  • 2 Tbls Butter
  • 1 1/2 Cup Heavy Cream
  • 2/3 Cup Grated Parmesan Cheese (use fresh)
  • 2-3 clove Garlic (minced)
  • 24-32 ounces Steak (fatty cuts are better)

Instructions

  • Cut you steak into cubes and cook in air fryer at 380 for 6-7 minutes, shaking halfway through
  • After steak is cooked, pour a little bit of the juice into a pan over medium heat
  • Add butter to pan and melt.
  • Add minced garlic and sauté until soft, (about 2 minutes). Be careful not to burn the butter
  • Add Heavy cream and stir to prevent scalding
  • Allow heavy cream to reduce for 3 to 5 minutes
  • Add Parmesan cheese and melt
  • Once the sauce is thickened, add the steak and coat it well
  • Enjoy with some of the cream sauce on the side

  • 12 Ounces Shredded Cheese

Instructions

  • Preheat oven to 350 degrees
  • Thaw Shrimp
  • Chop up bacon and cook in a pot
  • In a pot over low to medium heat, combine Heavy Cream, Butter, Cream Cheese and Shredded Cheese and combine well
  • In a casserole dish, mix bacon & shrimp (save some bacon for the top)
  • Add Cheese sauce and combine well
  • Top with some shredded cheese
  • Sprinkle pork rind crumbs and some cooked bacon over the top
  • Cook until top is golden brown

Coconut Chicken & Shrimp

We love fried shrimp and chicken but as we all know, breading is a NO-NO on Keto. This recipe solves that problem and adds a tropical flair to it.

  • 1 serving Pina Colada Keto Chow
  • 1 Cup shredded coconut
  • 1 pound Chicken Terderloins
  • 20 Large Shrimp Peeled and deveined
  • 1-2 Large eggs

Instructions

  • In a bowl, combine keto chow and shredded coconut.
  • In a separate bowl, beat eggs
  • One at a time, dip the shrimp and chicken into the egg mixture
  • Using a fork or spoon, transfer shrimp and chicken to the bowl with the "breading" mixture and cover completely.
  • Shallow fry in a frying pan with coconut oil until golden brown. Do not over cook it.
  • You can also cook this in an air fryer at 400 degrees for 10-15 minutes or until brown. Flip halfway through. For best results in an air fryer, lightly spray the chicken and shrimp with a healthy spray oil like coconut oil or avocado oil

Dairy Free Chocolate Pudding

This is a delicious way to get your protein in and have a delicious desert. The recipe is based off Maria Emmerich's protein pudding (link for video is down below)

Equipment

Ingredients

  • 12 Large Eggs
  • 1 serving Keto Chow Chocolate Core
  • 13.5 ounces Canned Coconut Milk
  • 10-12 drops liquid sucralose or stevia Optional to add sweetness
  • 2 Tbls Cocoa Powder

Instructions

  • Scramble eggs. Don't over cook them. They should be slightly wet when finished. You can also use hard boiled however you will need to blend them longer and you do have a sulfur smell until you allow the pudding to "set up" overnight
  • In a good blender (it doesn't have to be a vitamix) add all ingredients Make sure you put the liquid in first to make it easier.
  • Start blender on low and increase to high speed and blend until smooth
  • Once the pudding is smooth, remove lid of blender and scrape down sides
  • Replace lid and blend for about 30 more seconds
  • At this point, the pudding is ready to eat but the texture improves (especially if you use hard boiled eggs) if you allow it to "set up" in fridge for a few hours.
  • Pour into an airtight container and allow to set up for a couple hours in the fridge
  • Enjoy a serving and store remaining pudding in fridge for up to 6 days

The above nutrition will change depending on what keto milk you use.   
  • Though we are using Keto Chow, this recipe will work with other beef protein powder like Equip Chocolate protein powder.   The final texture and taste may be slightly different with Equip.   For best results, we highly recommend sticking with keto chow.  It has the best ingredients and is how we designed the recipe
  • This recipe will work with any of the sweet flavors of Keto Chow however it will not be dairy free.   
  • We choose to use liquid sweeteners like sucralose, stevia or monk fruit to up the sweetness.  You can use 1/2 cup of powdered erythritol however you will be adding 12 total carbs per serving (72 for the whole recipe)

Parmesan Herb Chicken Sausage

We love chicken sausage but the store bought ones are expensive and have ingredients we prefer to avoid. These are some of the most delicious, juicy sausages you'll ever try

Ingredients

  • 5 pounds Chicken Thighs
  • 8 ounces cold butter (cut into small pieces)
  • 8 ounces Shredded Parmesan Cheese
  • 45 grams Redmond Real Salt
  • 8 grams ground white pepper (can use black pepper)
  • 12 grams Fresh Parsley (chopped)
  • 12 grams Fresh scallions (or chives) chopped
  • 8 grams Fresh Tarragon (chopped)
  • 8 grams Fresh Oregano (chopped)
  • 25 grams Fresh pressed garlic (you can smash and chop as well)
  • 8-10 feet 29-30mm hog casings

Instructions

  • Make sure your meat is very cold. We suggest putting it in the freezer for about 30 minutes before beginning
  • If using fresh chicken thighs, cut into pieces based on your meat grinder and grind through largest die.
  • In a bowl, combine meat with all of your herbs and the butter. (LEAVE OUT THE CHEESE FOR NOW)
  • Run through a medium die on your grinder. Add cheese and mix by hand.
  • Run through the grinder with a medium die one more time.
  • Place back into freezer for a few minutes while you clean your grinder
  • In a bowl or with a meat mixer, emulsify the sausage. It should become tacky and stick to your hand when you turn it upside down
  • Place back into freezer and set up your sausage stuffer
  • Stuff sausage into hog casings and twist into 6-8 inch links. (You can also turn them into patties)
  • Poke each link with a poking tool 3-4 times
  • Place the sausage links into the refrigerator overnight to dry out the casings.
  • Separate links and then place them into storage bags for freezer. If you would like to precook them, parboil or cook in a Sous Vide until you have an internal temperature of 155-160 degrees.
  • Store uncooked sausage you plan to eat in fridge for up to 3 days and freeze the rest.

Hot Dogs

We love hot dogs but many of the store bought hot dogs have sugar, natural flavors and lots of other questionable ingredients. Making your own hotdogs is pretty easy and only requires a few things.

Ingredients

  • 2 pounds Ground Beef 80/20 or higher in fat (DO NOT USE LEAN)
  • 2- grams Redmond Real Salt
  • 10 grams Paprika
  • 5 grams Granulated Garlic
  • 4 grams Ground Black Pepper
  • 3 grams Onion Powder
  • 2.5 grams Prague Powder #1
  • 1 cup Crushed Ice
  • 20 feet Sheep or cellulose casing

Instructions

  • Get your meat very cold by putting it into the freezer for a little while. You want to keep the meat below 40 degrees
  • Grind meat on a course grind (if you are grinding meat)
  • Combine all of you spices and blend by hand into the meat
  • Put mixture back into the freezer for a little while to get it cold (again, keep it below 40 degrees)
  • Run meat mixture through a grinder on a medium grind plate. If you don't have a grinder, or are using pre-ground meat, skip to the next step
  • Place all the meat into a food processor along with 1/2 cup to 1 cup of ice. Emulsify the meat until it becomes a uniform consistency and color. After about 1 minute, add some more ice to keep it cold. You will know the meat is fully emulsified when it is one color and you can not distinguish the fat from the protein. It should be very sticky. It should stick to your hand when you hold it upside down
  • Place mixture back into freezer while you clean your tools and set up stuffer
  • Load up the sausage stuffer with your casings and hot dog meat.
  • Stuff the hot dogs and then tie off every 8-10 inches.
  • Place the links in fridge overnight
  • Precook your hotdogs in a smoker, Sous Vide or by Par-boiling. You want to do this at a low temperature until the hot dogs reach an internal temperature of 150-155 degrees
  • As soon as the hot dogs are done, immediately transfer to an ice bath for a few seconds to stop the cooking process. Then transfer back to pan to allow to further cool down.
  • Once they are cool, if you are using cellulose casings, remove from casing. Place hot dogs into an airtight container (we like to vacuum seal them)Can be stored in the fridge for 7-10 days or frozen for 6 months.

Notes

The key to making good hot dogs is to keep the meat cold the entire time.  It is also helpful to chill your grinder and sausage stuffer, which will help keep the mixture cold.   If you allow the meat to get warm, it will affect the emulsification.   You also want to not overcook them.  Doing that will cause them to be dry and the fat will ooze out of the casing.

Turkey Soup

This a great way to utilize the carcass of a turkey or chicken

Ingredients

  • 1 Turkey Carcass
  • 1 Tbsp Redmond Organic Season Salt Or any other seasoning
  • 4 Quarts Water
  • Extra Turkey Meat

Instructions

  • Pick as much meat as you can off the turkey carcass and save in fridge
  • Place Turkey Carcass and salt in a pressure cooker and fill to the 5 quart mark (about 4 quarts of water)
  • Pressure cook on high for 3 hours
  • When done, strain out broth and set aside
  • In a separate bowl, pull out as much meat as possible
  • Divide all the meat into 5 canning jars (or whatever you are storing it in) and cover with the broth
  • Now crumble up the bones with the carcass and feed to your animals. You can also eat the bones

Ingredients

  • 1 large Can of chicken (7 ounces drained)
  • 1/4 Cup Grated Parmesan Cheese (roughly 1 ounce)
  • 1/4 Cup Ground Pork Rinds
  • 1 Large Egg
  • 1 Ounce Cream Cheese Softened

Instructions

Dry Chicken

  • Preheat your oven to 500 degrees or as high as it will go
  • Drain the chicken and squeeze out as much water as possible
  • Spread chicken on a piece of aluminum foil or parchment paper and place in oven for 5-6 minutes to allow the chicken to dry. DO NOT OVER COOK IT. Chicken should be dry but not brittle. It's ok if it has a little moistness to it

Making crust

  • Lower oven temperature to 400 degrees
  • Combine dried chicken with rest of ingredients. Make sure you incorporate the cream cheese really well
  • Place dough on a piece of parchment paper, place another piece of parchment paper over the top and roll out to desired thickness.
  • Bake in oven for 5 minutes to crisp up crust
  • After 5 minutes flip over for another 3-5 minutes.,
  • Remove from oven and cover with favorite toppings
