If you ever had a recipe that you wanted to convert to keto, but couldn't because it called for condensed milk, here is your chance. This is a delicious condensed milk that is perfect for fudge, bars and even your coffee

Ingredients

  • 2 Cups Heavy Whipping Cream
  • 1/4 Cup Bochasweet (or 1/3 cup powdered keto sweetener)
  • 3 Tablespoons UNSALTED butter

Instructions

  • In a large skillet (do not use a small saucepan) melt butter
  • Add heavy whipping cream and sweetener and mix well.
  • Bring mixture to a boil and then reduce to a simmer
  • Stir occasionally to prevent scalding
  • Continue to simmer for about 25-30 minutes until mixture had reduced by about 1/3 and it coats the back of a spoon
  • Transfer to a glass container and allow to cool. Place in the fridge for 4 hours to allow milk to firm up

Instructions

  • Pour milk, heavy whipping cream and lemon juice into instantpot
  • Cook on Low pressure, under seal, for 6 minutes
  • Allow to slow release for 10-15 minutes
  • Pour into a cheese cloth lined strainer and allow to strain until cool
  • Squeeze excess whey out of curds and pour curds into a food processor
  • Add a pinch of salt and blend until smooth
  • Store in an airtight container

  • 12 ounces Dijon Mustard
  • 8-12 ounces 2kk Yogurt Use can use our full fat or low fat version
  • Liquid sucralose You can use any liquid sweetener (like Stevia)

Instructions

  • Using a hand mixer, combine Dijon Mustard and Yogurt in a bowl
  • Add a few drops of sweetener and taste. Add more if you want it sweeter
  • Thin out with 1-2 tablespoons of water until you get to the desired consistency
  • Pour into a condiment bottle

Butter Mayo

This recipe was inspired by us eating the Beef Butter Bacon & Egg challenge. The difference between this and Hollandaise is the amount of eggs and adding mustard

Ingredients

  • 2 Egg yolks
  • 1 Tbls Mustard
  • 1 tsp Lemon juice (you can use 2 tsp and eliminate vinegar)
  • 1 tsp Apple cider vinegar (you can use 2 tsp and eliminate lemon juice)
  • 1 cup Melted butter
  • 1/2 tsp Redmond Real salt (salt to taste)
  • 1/4 tsp tara gum (optional for a creamier mayo)

Instructions

  • Melt you butter and allow to cool for a few minutes
  • In a mason Jar, add egg yolks, mustard, salt, lemon juice, apple cider vinegar and quickly mix with an immersion blender (you can also use a blender)
  • With immersion blender running, add a little butter to the mixture and blend until it thickens.
  • Continue adding butter a little at a time and blend. Make sure you don't add too much butter at once or the mayo will break
  • As the mayo begins to thicken, you begin to slowly drizzle remaining butter into the mixture
  • Once all the butter is added, continue blending for a few seconds to thicken up the mayo. The longer you blend it, the thicker it will be but it will harden more in the fridge
  • For a creamier mayo and one that doesn't solidify as much in the fridge, add 1/4 tsp of tara gum
  • Store in an air tight container for up to 10 days

Notes

A few tips:
  • You can make this in a traditional blender or with a whisk.  Just slowly pour the butter in just as you do with the immersion blender.
  • For a creamier mayo, add 1/4 tsp tara gum after all butter is added.
  • For a mayo that doesn't harden up as much in the fridge, don't blend as long.
  • You can also use whole eggs instead of just the yolks

Save money and make your own clarified butter and Ghee. To make clarified butter, simply follow this recipe and stop before the milk solids begin to toast

Ingredients

  • 4 cups butter (salted or unsalted)

Instructions

  • In a pot, slowly melt butter. Make sure you don't bring it to a boil.
  • Once it comes to a simmer, the milk solids will begin to float to the top and the butter will start sputtering. The sputtering is the water evaporating and is a good thing
  • As the milk solids begin to float to the top, gently strain them from the top without stirring the butter too much
  • Once the sputtering stops and the solids fall to the bottom, you have Clarified Butter
  • To make Ghee, all the butter to continue simmering to allow milk solids to fall to bottom and toast (about 10 more minutes)
  • After the clarified butter/ghee is done, allow to cool and pour through a cheesecloth lined fine strainer into a mason jar.

  • In a large saucepan, add water, vanilla extract, allulose and cream of tartar and combine well
  • Bring the mixture to a rolling boil and stir
  • Once everything is at a boil, reduce heat to a simmer and allow it to reduce. Stir occasionally. Allow liquid to continue simmering until the liquid has reduced by half and the syrup covers the back of a wooden spoon and is thick while mixing. The color should turn a golden yellow
  • At this point, taste for sweetness and add 3-4 drops of liquid sucralose or stevia if you'd like it to be sweeter. This step is completely optional
  • While whisking, slowly sprinkle the tara gum into the liquid and combine well. The syrup should now be very thick.
  • The syrup will thicken as it cools so don't be deceived by how thin it is at first. If after it cools, it still isn't thick enough, reheat and add another 1/8-1/4 tsp of tara gum.
  • Allow to cool for a few minutes and transfer to an air tight container. Store in pantry for up to 3 months.

Allulose acts like sugar and will caramelize so make sure you stir occasionally while simmering so it doesn't burn on the bottom of the pan.   The longer you simmer your syrup, the darker and thicker it will become.   The darker color will not affect the taste.
Use the tara gum sparingly,  you can always add more later but you can't take away.  The same goes for adding additional sweeteners like sucralose

Notes

This is a great substitute for the canned cranberry sauce Joe used to purchase for all the holiday get togethers.   It has the perfect consistency and sweetness

When it comes to greek food, the only thing we love more then gyro meat is the Tzatziki sauce that goes with it. The problem with many store bought ones is they have questionable ingredients. This recipe fixes that and its lower calorie and it has good ingredients.

Ingredients

  • 2 cups Lowfat greek yogurt (use our recipe)
  • 1 english cucumber
  • 1 tablespoon Minced garlic (or 3 cloves minced)
  • 1 tablespoon olive oil
  • 1/2 tablespoon white vinegar
  • 1 teaspoon Mineral salt
  • 1/2 teaspoon ground pepper (white is preferable)
  • 1 sprig Dill, chopped (or half tsp dried)

Instructions

  • Peel cucumber and chop it into small piece
  • Place cucumber in paper towels or cheese cloth and squeeze some of the water out
  • In a bowl, combine Yogurt with all ingredients and mix well.
  • Allow mixture to sit in fridge for a minimum of 1 hour before serving. The longer it sits, the better it tastes. Allowing to sit overnight brings out the best flavor

Notes

If you use our recipe in cronometer, you will see it says there is 1.7 carbs per serving. That's because there is no way to tell cronometer to take out the carbs that removed by the whey in the yogurt making stage. This recipe utilizes 4 servings of our yogurt recipe, which shows up as 15 total carbs. When you subtract the amount of whey removed, it comes out to 5 total carbs for 4 servings. (2.5 carbs per serving). If you remove the 10 total carbs from this recipe and divide by 15 (total number of servings) you get 1.1 carbs per serving.
